Founder's Corner

We've got lots of great things to share this week, and something I'm really excited to announce (more on that below). 

But first, Tuesday was Veterans Day here in the US, and I want to take a brief moment to honor my Dad here in The Weekly Light.

My Dad was 18 when he went off to Vietnam, became an accomplished helicopter pilot, survived unimaginable challenges, and then returned home to put himself through law school and raise our family.

Thank you Dad, and all the Vets out there, for all the sacrifices you made.

 One day a year certainly isn't enough.

Chicken Pesto Meatballs

These meatballs are a delicious twist on a classic favorite. They're perfect for a cozy family meal or a dinner party.

It says a lot that Seth (a self-professed meatball lover) wasn't a fan of the idea of chicken meatballs when I first suggested this recipe. But, one bite of the juicy pesto flavor was all it took to win him over, and now it's a regular in our rotation.

Pop some in the freezer so you have a quick dinner ready to heat up in a pinch!
